This is a lovely, moist bread that is ideal for a healthy, nutritious breakfast. It’s very simple and can be easily modified to suit your needs. Walnuts can be replaced with almonds or pecans, and cranberries with raisins or dried apricots. You can substitute brandy or orange liquor for the rum, and if you don’t drink alcohol, you can substitute lemon or orange juice.
For the bread.
Ingredients:
- 115g whole wheat flour
- 100g all purpose flour
- 1 tablespoon ground flax seed
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 130g brown sugar
- 1 teaspoon ground cinnamon
- generous pinch of nutmeg
- 180ml buttermilk
- 75g butter, melted
- 2 large eggs, lightly beaten
- 2 large apples, grated
- 50g walnuts, roughly chopped
- 30g dried cranberries, chopped
- 1 tablespoon rum
Directions:
Preheat the oven to 180 degrees Celsius. Butter and flour a loaf pan. (23x13x8cm). Warm the rum and then pour it over the cranberries. Allow them to soak while you prepare the batter. Combine all dry ingredients in a mixing bowl: both flours, flax seeds, baking powder, baking soda, salt, sugar, and spices. In a separate bowl, whisk together the buttermilk, eggs, and butter before adding to the dry ingredients. Mix until everything comes together. Combine the grated apples, dried cranberries, rum, and walnuts in a mixing bowl. Fold to combine, then pour into the prepared pan. Bake for 45 minutes, sprinkled with brown sugar and cinnamon mixture. (test with a wooden skewer). Allow the cake to cool in the pan. It looks stunning when served warm and tastes just as good at room temperature.
For sprinkling.
- 1 tablespoon brown sugar
- 1/4 teaspoon ground cinnamon
Commentary.
Toast with butter and homemade jam, müsli with yogurt and fresh fruit, oatmeal on occasion… That is a typical breakfast in our house. But every now and then, I get bored with the same old stuff and crave something new, something equally nutritious, healthy, quick, and sweet. That is when I make this delicious apple bread.
