If you enjoy both chocolate and wine, these truffles are the perfect dessert for you. The dominant flavor in these truffles is chocolate, but you can taste the lovely fruitiness of the wine as the dark chocolate melts on your tongue. The addition of red wine enhances the sweetness and freshness of the truffles while also adding depth of flavor. This recipe works best with Cabernet Sauvignon, Merlot, or Ruby Port.
- 260g dark chocolate (70% cocoa solids), finely chopped
- 120ml red wine (Cabernet Sauvignon or some other fruity sweet wine)
- 60ml heavy cream
- 1 tablespoon butter
- cocoa powder, for rolling truffles
Set aside the chopped chocolate in a heat-resistant bowl. Combine wine and heavy cream in a small, heavy-bottomed saucepan. Bring the mixture to a boil and then remove from the heat. Pour over chocolate pieces and set aside for a few minutes to allow the chocolate to melt. Stir gently with a whisk until combined. The ganache should be thick and smooth. Refrigerate the bowl, covered with plastic wrap, for 2 hours, or until completely set.
Scoop out chocolate balls from the chilled ganache with a melon-baller or a teaspoon. Roll the balls quickly between your palms, then roll in cocoa powder and place in the refrigerator. Refrigerate the truffles for at least 30 minutes before serving.

You see, I have this ritual. I sit back and do nothing every night after the baby has fallen asleep.
I didn’t realize the true value of doing nothing until I had a child. It’s fantastic. And it turns out I’m pretty good at it.
It’s even better if you’re nibbling on a piece of dark chocolate while sipping a glass of red wine, as I do every night. It’s preferable to wellness. And it’s also less expensive.
If you’re like me, you’ll adore these truffles. What’s not to love about this? The two best things in the world rolled into a perfect little bite-sized ball that melts on your tongue and coats your mouth in chocolatey goodness.
Please do yourself a favor. Make some truffles, pour a glass of wine, and do nothing.
