The original recipe calls for basil. I used thyme instead, but you could also use rosemary or oregano.
Ingredients:
- 155g all-purpose flour
- 20g grated Parmesan cheese
- 1 tablespoon fresh thyme leaves
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 120ml buttermilk
- 1 1/2 tablespoons olive oil
Directions:
Preheat the oven to 200 degrees Celsius. Using parchment paper, line a baking sheet. Combine the flour, cheese, thyme, baking powder, baking soda, and salt in a large mixing bowl. Stir in the buttermilk and oil until just moistened. Turn out onto a lightly floured surface and knead three times gently. Knead the dough as little as possible, just until it comes together. Roll out the dough to a thickness of 1 1/2 cm and cut with a floured 4-5 cm biscuit cutter. Place the biscuits on the prepared baking sheet, 2 cm apart. Scrape the remaining dough, press it together gently, and cut out more biscuits. Repeat until all of the dough has been used. Bake for 15 minutes, or until the biscuits are lightly browned. Serve hot.
Commentary.
These biscuits are incredibly simple and quick to make. Simply combine all of the ingredients in a mixing bowl, shape into biscuits, and bake. They are an excellent snack or party food. Their fluffiness and deliciousness will elevate your canapes to new heights. I also like to serve them with various soups and stews.
