This delicious avocado pasta comes together quickly. The avocado sauce is smooth and creamy, as well as healthy and nutritious. The recipe is vegetarian, but it is easily veganized by leaving out the grated Parmesan cheese at the end.
- 400g dried spaghetti
- 2 ripe avocados, peeled and pitted
- juice of 1 lemon
- 1/2 teaspoon lemon zest
- 2 garlic cloves, roughly chopped
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh basil
- 1/2 teaspoon sea salt
- some freshly ground pepper
- 3-4 tablespoons pasta cooking water
- lemon wedges, to serve
- grated Parmesan cheese, to serve
Cook spaghetti according to package directions in a pot of boiling salted water.
Combine avocado, lemon juice and zest, garlic, olive oil, basil, salt, and pepper in a food processor or blender. Blend until smooth and creamy. Taste it and adjust with more salt or lemon as desired.
Thin the sauce with a little pasta cooking water. Blend until smooth and creamy. The sauce should be the thickness of thick yogurt. If necessary, add more water.
Drain the pasta and add the avocado sauce to the boiling pasta water. Stir in the spaghetti until thoroughly combined. Serve with freshly grated Parmesan cheese and lemon wedges.
